Christmas is coming and this Apricot Exotica works really well as a warm, spicy coulis. My favourite dessert – apple, rasin and rum crumble with vanilla icecream and a generous helping of Apricot Exotica.
The wind is howling outside and I can hear the waves crashing on the shore just down the road. But the kitchen has been busy today and the warm smell of bread pudding is accompanied by the spices used in today’s small batch of Apricot Exoticas. The organic unsulphured apricots giving this jam is dark rich colour.
A glut of cooking apples is a fantastic source of pectin. Boil them up and freeze in 300 – 500 ml blocks to add to fruit that isn’t so willing to set.
